What is the history of your company?
We have been in operation since 1978. It started as a family business. We delivered live chicken to the shops (it used to be like that) and then, once it was slaughtered, it was refrigerated. When the change from live to refrigerated chicken took place, I set up a cold room in the lorry and the same people who bought the live chicken from me kept buying it refrigerated. "
When did you arrive at MercaGranada?
I came to MercaGranada in 1990. I set up a warehouse, I had several lorries for delivery, and I realised that I needed more space. Besides, I wanted to grow, I wanted to make my own products. That's why in 2000 I built my own warehouse, where we are now with 2000 square metres.
What activity do you carry out here, in Mercagranada?
Distribution of refrigerated meat, poultry, processing room, pre-cooked meat processing room... Continuing with our history and in view of the evolution and demand of the market, a chain of chicken rotisseries was born. At the beginning, we supplied the fresh chicken to each shop, and it was processed in that establishment. But then we studied the situation again and saw that it was very expensive to produce it in these rotisseries, so we decided to set up a central kitchen in the warehouse that supplied them with the complete process: Catering of prepared, cooked and pasteurised dishes as well as fresh pre-cooked products. These products are now sold in large chains, supermarkets, shops, bars and restaurants. The difference is that we allow an establishment to have a wide variety of products.
In addition, your company is addressing the foreign market How?
There is tourism coming from other countries and they try our gastronomy... they like it. I notice that in their country they are starting to generate demand... This is where I got the idea and that's why we are sending paellas, migas, stew... mainly to France and Germany. Surprisingly we are finding a very interesting demand, we are sending snails to France!
For Christmas, is demand growing and which products are attracting the most demand? For Christmas, is demand growing and which products are attracting the most demand?
Vacuum pasteurised roast suckling pigs, roast stuffed chickens, roast stuffed chicken roti... all these products sell more at Christmas. I can also mention roast leg of lamb, roast knuckle of pork... These are products that are very good at this time of year. Keep in mind that they are just 5 minutes in the oven and they are ready.
